    Cook the Grits

    In a large saucepan, bring 4 cups of water to a boil. Add the grits and a pinch of salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until thickened. Remove from heat and set aside.

    Sauté the Vegetables

    In a large skillet, heat the cider vinaigrette over medium heat. Add the sliced onions and sauté until caramelized, about 10 minutes. Add the fresh corn and roasted red peppers, cooking for another 5-7 minutes until heated through. Season with salt and black pepper to taste.

    Combine and Serve

    Stir the sautéed mixture into the cooked grits. Serve the smothered grits warm, topped with shredded Cabot cheddar cheese and garnished with sliced scallions.
