Cooking Instructions

  1. 1

    Prepare the Grits

In a large saucepan, bring the water and vegetable broth to a boil. Gradually whisk in the white grits and salt. Reduce the heat to low and simmer, stirring frequently, for about 20-25 minutes or until the grits are thick and creamy.

  2. 2

    Add Cream and Cheese

Once the grits are cooked, stir in the heavy cream, butter, and grated Parmesan cheese. Mix well until cheese is melted and the grits are smooth. Set aside.

  3. 3

    Sauté Vegetables

In a skillet over medium heat, melt a tablespoon of butter. Add the minced garlic and diced shallots. Sauté for about 2-3 minutes until fragrant. Add the fresh spinach and cook until wilted.

  4. 4

    Combine and Season

Add the sautéed vegetables to the creamy grits. Season with black pepper and chili flakes. Mix thoroughly.

  5. 5

    Serve

Spoon the smothered grits into bowls and garnish with chopped chives. Serve warm.
