    Prepare the Eggs

    In a bowl, whisk together the eggs, adding salt and pepper to taste. Heat a non-stick skillet over medium heat, add a little oil or butter, and scramble the eggs until just set. Remove from heat and set aside.

    Warm the Tortillas

    In the same skillet, warm the flour tortillas one at a time until they are pliable. This should take about 30 seconds on each side.

    Assemble the Burritos

    On each tortilla, layer 1/2 cup of pulled pork, a portion of scrambled eggs, and a generous sprinkle of Monterey Jack cheese. Roll the tortillas tightly to encase the filling.

    Smother with Salsa

    Place the rolled burritos on a serving plate. Pour salsa ranchero generously over the top of each burrito, ensuring they are well-covered.

    Garnish and Serve

    Sprinkle fresh cilantro over the smothered burritos for garnish. Serve immediately.
