Cut and Soak
Peel the sweet potatoes and cut them into fries. Soak in cold water for at least 30 minutes to remove excess starch.

Preheat and Dry
Preheat your oven to 425°F (220°C). After soaking, drain the sweet potatoes and pat them dry with paper towels.

Season
In a large bowl, toss the sweet potatoes with olive oil, salt, black pepper, and paprika until evenly coated.

First Bake
Spread the fries in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway through until they are tender.

Second Bake
Remove from the oven, let them cool for a few minutes, then increase the oven temperature to 450°F (232°C). Bake for an additional 10-15 minutes until crispy.
