Prepare the Chicken Wings
In a large bowl, mix the chicken wings with olive oil, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper until evenly coated.

Preheat the Smoker
Preheat your smoker to 225°F (107°C) using hickory or your preferred wood chips.

Smoke the Wings
Place the wings in the smoker and smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Optional Frying
If you prefer fried wings, heat oil in a deep fryer to 350°F (177°C) and fry the wings for 8-10 minutes until crispy and golden brown.

Serve the smoked or fried wings hot with housemade buttermilk ranch dressing on the side.
