Prepare the Ribs
Remove the membrane from the back of the ribs. Mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper in a bowl. Rub the spice mixture all over the ribs. Let the ribs sit for at least 30 minutes to absorb the flavors.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Use a mix of wood chips (like hickory or apple) for a nice smoky flavor.

Smoke the Ribs
Place the ribs in the smoker, bone side down. Smoke for about 5-6 hours, or until the meat is tender and pulls away from the bone easily. Occasionally, check the water pan and add water or apple cider vinegar as needed.
