Pit-Smoked BBQ Chicken

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken all over with olive oil.

    Season the Chicken

    In a small bowl, mix together salt, black pepper, garlic powder, paprika, and mustard powder. Rub this seasoning mix all over the chicken, making sure to get under the skin where possible.

    Prepare the Pit

    Soak the smoked wood chips in water for at least 30 minutes. Prepare your pit or smoker with charcoal and add the soaked wood chips.

    Smoke the Chicken

    Place the chicken on the grill grates of the smoker, breast side up. Close the lid and smoke the chicken for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C).

    Rest and Serve

    Remove the chicken from the smoker and let it rest for 10-15 minutes before carving. Serve with South Carolina Mustard BBQ Sauce.
