New Mexico Black Bean & Hominy Burger Recipe

    Make the Burger Mixture

    In a large mixing bowl, mash the black beans and hominy together until mostly smooth but still slightly chunky. Stir in the roasted garlic, diced red bell pepper, chopped onion, cumin, coriander, salt, and black pepper. Mix until well combined.

    Add Binders

    Add the breadcrumbs and egg to the bean mixture. Mix until all ingredients are well incorporated. If the mixture seems too wet, add more breadcrumbs as necessary.

    Form Patties

    Divide the mixture into four equal portions and shape each into a patty.

    Cook the Patties

    Heat the olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.

    Prepare the Avocado Salad

    While the patties are cooking, prepare the avocado salad by mashing 1 ripe avocado and mixing it with lime juice, salt, and chopped cilantro to taste.

    Assemble the Burgers

    Once the patties are cooked, place each on a brioche bun. Top with the avocado salad and sliced New Mexico green chiles. Serve immediately.
