Preheat the Oven
Preheat your oven to 425°F (220°C).

Make the Biscuit Dough
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Shape the Biscuits
Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits using a biscuit cutter.

Bake the Biscuits
Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
Sawmill Gravy

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove and crumble, leaving the drippings in the pan.

Make the Roux
Add flour to the bacon drippings and whisk constantly for about 2 minutes until golden.

Add Milk and Seasoning
Slowly whisk in the milk, cooking until the gravy thickens. Add salt, black pepper, and red pepper flakes to taste.

Combine Bacon and Gravy
Stir in the crumbled bacon into the gravy.
