    Prepare the Fries

    Peel the Russet potatoes and cut them into thick fries. Rinse the fries in cold water to remove excess starch, then pat them dry with a paper towel.

    First Fry

    In a deep pot, heat the vegetable oil to 325°F (160°C). Fry the potatoes in batches for about 4-5 minutes until they are soft but not colored. Remove and drain on paper towels.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 3-4 minutes until golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.

    Assemble the Poutine

    In a serving dish, layer the crispy fries, then top with Widmer's cheese curds. Pour hot beef gravy over the top, allowing it to melt the cheese curds slightly.

    Garnish

    Chop the scallions and sprinkle them over the top of the poutine for added flavor and color.
