    Prepare the Ingredients

    Chop the onion, green bell pepper, celery, and garlic. Slice the Andouille sausage into rounds.

    Cook the Sausage

    In a large pot, heat olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add onion, bell pepper, celery, and garlic. Sauté until softened, about 5-7 minutes.

    Add Okra and Spices

    Stir in the okra, bay leaves, thyme, cayenne pepper, salt, and black pepper. Cook for another 2-3 minutes.

    Combine Shrimp Stock

    Pour in the shrimp stock and bring to a simmer. Add the cooked sausage back into the pot.

    Cook the Shrimp

    Add the shrimp and cook until they turn pink and opaque, about 3-5 minutes.

    Prepare the Rice

    In a separate pot, cook the Carolina Gold rice according to package instructions.

    Serve

    Ladle the gumbo into bowls over a scoop of rice. Garnish with filé powder to taste.
