    Prepare the Roux

    In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 20-30 minutes.

    Cook the Vegetables

    Once the roux is ready, add the diced onions, green bell pepper, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Meats and Liquids

    Add the sliced Andouille sausage and chicken thighs to the pot. Cook for 5 minutes, then add the crushed tomatoes, chicken broth, bay leaves, thyme, and Cajun seasoning. Stir well.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for about 45-60 minutes, stirring occasionally. Season with salt and black pepper to taste.

    Add Shrimp

    In the last 10 minutes of cooking, add the shrimp and let them cook until pink and opaque.

    Garnish and Serve

    Remove the bay leaves, then serve the gumbo over cooked rice. Garnish with sliced green onions and chopped parsley.
