    Prepare the Grits

    In a large pot, bring 4 cups of water to a boil. Add the salt and slowly stir in the grits. Reduce heat to low and simmer, stirring occasionally, until thickened (about 20-25 minutes). Stir in the cheddar cheese until melted and creamy. Set aside.

    Cook the Steak

    Season the steak with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the steak for about 4-5 minutes on each side, or until cooked to your desired doneness. Remove the steak from the skillet and let it rest before slicing.

    Make the Grillades Sauce

    In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute. Stir in the tomato paste, chicken broth, Worcestershire sauce, cayenne pepper, and bring to a simmer. Let it cook for about 10 minutes to develop the flavors.

    Serve

    Slice the rested steak and place it over a bed of grits. Spoon the grillades sauce over the steak and grits. Garnish with chopped scallions before serving.
