Preparation Steps

    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of stone ground grits and 1 tsp of salt. Stir and reduce the heat to low. Cover and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Cook the Bacon

    In a skillet over medium heat, cook the 4 slices of Nueske's applewood smoked bacon until crispy. Once cooked, remove the bacon and let it drain on paper towels. Reserve some bacon grease in the skillet.

    Fry the Eggs

    In the same skillet with reserved bacon grease, crack the 2 large eggs. Fry them to your desired doneness (sunny side up, over easy, etc.).

    Assemble the Dish

    Once the grits are cooked, stir in the 1 cup of Cabot aged cheddar cheese until melted. Serve the cheesy grits in a bowl, top with fried eggs, crumbled bacon, and chopped scallions. Serve with a biscuit on the side.
