Southern version of the Dutch classic waffles filled with bits of Anson Mills' organic grits, Cabot cheddar cheese and Neuske's applewood smoked bacon.

Preheat your waffle iron according to the manufacturer's instructions.

In a large mixing bowl, whisk together the all-purpose flour, organic grits, baking powder, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Add Cheese and Bacon
Fold in the shredded cheddar cheese and crumbled bacon until evenly distributed.

Ladle the batter into the preheated waffle iron, filling it according to the manufacturer's recommendations. Close the lid and cook until the waffles are golden brown and crispy, about 5-7 minutes.
