Mix Ingredients
In a large bowl, mix the fish mixture with eggs, matzo meal, salt, pepper, and sugar until well combined.

Shape the Quenelles
Wet your hands and shape the mixture into oval-shaped quenelles (about 2 inches long). Place them on a plate.

Prepare the Poaching Liquid
In a large pot, bring the water or fish stock to a gentle simmer over medium heat.

Poach the Quenelles
Carefully add the quenelles to the simmering liquid. Cook for about 20-25 minutes, until they are firm and cooked through.

Serve
Using a slotted spoon, transfer the gefilte fish to a serving platter. Garnish with fresh parsley and serve with sliced onions and carrots.
