Marinate the Chicken
In a bowl, combine buttermilk and chicken breasts. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading
In a separate bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Chicken
Remove chicken from buttermilk, letting excess drip off. Dredge chicken in the flour mixture, ensuring it is fully coated. Shake off excess flour.

Fry the Chicken
In a large skillet or deep fryer, heat vegetable oil over medium-high heat. Fry the chicken for about 7-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Assemble the Sandwich
Toast the brioche buns if desired. Place fried chicken on the bottom half of the bun, top with pickles and New Mexico green chili ranch. Cover with the top half of the bun.

Serve the fried chicken sandwich immediately with extra ranch on the side if desired.
