Prepare the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, garlic powder, salt, and black pepper. Gradually add the Wolverine Brewing P.U.B. Lager, stirring until the batter is smooth and well combined.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Coat the Cheese Curds
Dip the Widmer's cheddar cheese curds into the batter, ensuring they are fully coated.

Fry the Cheese Curds
Carefully drop the battered cheese curds into the hot oil in batches, frying until they are golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove them and drain on paper towels.

Serve the fried cheese curds hot with New Mexico green chile ranch dressing on the side for dipping.
