In a large bowl, combine the fresh corn kernels, lime juice, mayonnaise, chopped New Mexico green chiles, cayenne pepper, paprika, crumbled Cotija cheese, and half of the chopped cilantro. Mix well until everything is evenly coated.

In a separate skillet or on a grill, warm the flour tortillas on both sides until they are pliable and slightly toasted.

On each warm tortilla, layer a portion of the scrambled eggs followed by a generous scoop of the corn mixture. Top with additional crumbled Cotija cheese and the remaining chopped cilantro.
