Chili & Cheddar Cheese Fries Recipe
Our hand-cut, twice-cooked fries smothered in ancho beef chuck chili and topped with grated Cabot cheddar cheese and scallions.

Make the Chili
In a large pot over medium heat, add ground beef and cook until browned. Drain excess fat.

Add Ingredients
Add diced onions, minced garlic, and cook until onions are translucent. Stir in ancho chili powder, cumin, oregano, black pepper, diced tomatoes, kidney beans, and beef broth. Bring to a simmer and let cook for 30 minutes, stirring occasionally.

Prepare the Fries
Wash and cut the russet potatoes into thin strips. Soak in cold water for 30 minutes, then drain and dry thoroughly.

Assemble the Dish
Place fries on a serving platter, smother with the prepared chili, and top with grated cheddar cheese and sliced scallions.
