    Prepare the Mushrooms

    Clean the maitake mushrooms and separate them into smaller pieces. Set aside.

    Make the Breading

    In a mixing bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

    Prepare the Wet Mix

    In another bowl, whisk together the eggs and milk until well combined.

    Coat the Mushrooms

    Dip each mushroom piece into the wet mix, allowing excess to drip off, then dredge in the seasoned flour mixture. Ensure they are well coated.

    Fry the Mushrooms

    Heat oil in a deep pan over medium heat. Once hot, carefully add the coated mushrooms in batches and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    Make the Elote Dressing

    In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and chopped cilantro until smooth and well combined.
