Method

Prepare Mushrooms

    Soak the Mushrooms

    Dip the Maitake mushrooms in buttermilk and let them soak for at least 30 minutes.

    Prepare the Coating

    In a bowl, mix the all-purpose flour, salt, black pepper, paprika, and garlic powder.

    Coat the Mushrooms

    Remove mushrooms from buttermilk, letting excess drip off. Dredge mushrooms in the seasoned flour until fully coated.

    Fry the Mushrooms

    Heat oil in a deep skillet. Fry the coated mushrooms in batches until golden brown, about 4-5 minutes. Drain on paper towels.

Prepare Mashed Potatoes

    Boil Potatoes

    Peel and cut potatoes into quarters. Boil in salted water until tender, about 15-20 minutes.

    Mash Potatoes

    Drain potatoes and return to pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Prepare Pepper Gravy

    Make the Roux

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden.

    Add Broth and Seasoning

    Gradually whisk in chicken broth, then add black pepper and salt. Cook until thickened, about 5 minutes.

Serve

    Serve the fried mushrooms over a bed of mashed potatoes, drizzled with pepper gravy.
