Carolina Gold Rice Grits & Bits Waffle Recipe

A Carolina version of the Dutch classic waffles filled with bits of Anson Mills' organic rice grits, rice flour, Cabot cheddar and our applewood smoked bacon.

    Prepare the Waffle Batter

    In a large mixing bowl, combine the Carolina Gold Rice Grits, rice flour, baking powder, and salt. In another bowl, whisk together the milk, eggs, and vegetable oil. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded Cabot cheddar cheese.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

    Preheat the Waffle Iron

    Preheat your waffle iron according to the manufacturer's instructions.

    Make the Waffles

    Pour a ladleful of the batter into the preheated waffle iron, then sprinkle a portion of the chopped bacon on top of the batter. Close the waffle iron and cook according to the manufacturer's instructions, typically about 5-7 minutes, or until golden brown.

    Carefully remove the waffle from the iron and serve warm, garnished with additional cheddar cheese or bacon bits if desired.
