Soak the Beans
Rinse the Camellia dry red beans under cold water. Place them in a large bowl and cover with water. Soak overnight or for at least 6 hours.

Prepare the Sausage
In a large pot over medium heat, add the Andouille sausage. Cook until browned, about 5 minutes. Remove sausage and set aside.

Combine Ingredients
Drain the soaked beans and add them to the pot. Pour in 6 cups of water, add the cooked sausage, bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir well.

Cook the Beans
Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add water if necessary to keep it from drying out.

Serve
Remove bay leaves before serving. Serve the red beans over cooked white rice and garnish with sliced green onions.
