Marinate the Chicken
In a large bowl, combine buttermilk, salt, and optional seasonings. Add the chicken pieces and ensure they are well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating
In a separate bowl, mix the all-purpose flour, Tellicherry black pepper, and salt. If using optional seasonings, add them to the flour mixture.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of flour into it; if it sizzles, it's ready.

Bread the Chicken
Remove the marinated chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each piece in the seasoned flour mixture until fully coated.

Fry the Chicken
Carefully place the breaded chicken pieces in the hot oil, being careful not to overcrowd the pot. Fry for about 6-8 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Drain and Serve
Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot with your choice of sides.
