Method

Preparation

  1. 1

    Cutting the Potatoes

Wash and peel the Russet potatoes. Cut them into thick fries, about 1/4 inch wide.

  2. 2

    Soaking the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

  3. 3

    Heating the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Frying the Potatoes

Carefully add the fries to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy.

  5. 5

    Draining the Fries

Remove the fries with a slotted spoon and drain on paper towels. Season immediately with Tellicherry black pepper and kosher salt while still hot.

  6. 6

    Serving

Serve the black pepper fries hot, and enjoy them as a side dish or snack!
