Prepare the Collard Greens
Wash the collard greens thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.

Cook the Bacon
In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

Braised Collard Greens
Add the chopped collard greens to the pot, stirring to combine with the onions and garlic. Pour in the chicken broth and add the apple cider vinegar, red pepper flakes, salt, and black pepper.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 30 minutes until the greens are tender.

Finish and Serve
Crumble the reserved bacon and stir it back into the collard greens before serving. Adjust seasoning with additional salt and pepper if needed.
