Make the Tart Crust
In a large bowl, mix flour, sugar, and salt. Cut in butter until the mixture is crumbly. Stir in ice water, a tablespoon at a time, until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

Prepare the Apple Filling
In a large skillet, melt butter over medium heat. Add sugar and cinnamon, stirring until dissolved. Add apples and cook, turning occasionally, until apples are tender and caramelized, about 15 minutes.

Assemble the Tarte Tatin
Preheat the oven to 375°F (190°C). Place the caramelized apple mixture in a 9-inch ovenproof skillet. Roll out the chilled tart crust and place it over the apples, tucking the edges in. Cut a few slits in the top to allow steam to escape.

Bake
Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.

Cool and Serve
Let the tart cool for 10 minutes, then invert onto a serving plate. Serve warm with a scoop of vanilla gelato.
