Dough Preparation

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

In a large bowl, mix flour and salt. Create a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Caramelize Onions
In a skillet over medium heat, add a tablespoon of olive oil. Add sliced onions and cook for 15-20 minutes, stirring occasionally until caramelized.

Slice the pears and brie cheese while the onions are caramelizing.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
