Method

Gelato Preparation

1

Make the Gelato Base

In a saucepan, combine whole milk, heavy cream, and sugar. Heat over medium heat until sugar dissolves.

2

Whisk in Egg Yolks

In a bowl, whisk the egg yolks. Slowly add some of the warm milk mixture to temper the yolks, then pour it back into the saucepan. Stir constantly over low heat until thickened.

3

Cool and Flavor

Remove from heat, stir in vanilla extract, and let cool. Refrigerate for at least 4 hours or overnight.

Sorbet Preparation

4

Prepare Fruit Puree

Blend fresh fruit until smooth. Strain if desired for a smoother texture.

5

Make Sorbet Base

In a saucepan, combine water and sugar. Heat until sugar dissolves, then mix with fruit puree and lemon juice. Chill.

6

Cream butter, brown sugar, and granulated sugar together. Add eggs and vanilla, then mix in dry ingredients and chocolate chips.

7

Scoop dough onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes. Let cool on a wire rack.
