Chicken Preparation

Prepare the Chicken
Preheat the oven to 375°F (190°C). Set up a breading station with flour, beaten eggs, and breadcrumbs. Dip each chicken breast in flour, then in egg, and finally coat with breadcrumbs. Heat olive oil in a skillet over medium heat and cook the breaded chicken until golden brown on both sides. Transfer to a baking dish.

Bake Chicken
Pour marinara sauce over the chicken breasts and top with slices of fresh mozzarella. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Brown Butter Gnudi

Make the Gnudi
In a mixing bowl, combine ricotta cheese, all-purpose flour, grated Parmesan, egg yolk, and salt. Mix until a dough forms. Roll into small balls and set aside.

Cook the Gnudi
In a large pot of salted boiling water, carefully drop the gnudi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Plate the Dish
On a serving plate, place a portion of the baked chicken parmesan, add a side of brown butter gnudi, and finish with sautéed broccolini.
