1. Prepare the Vegetables
Clean the mixed mushrooms and slice them if they are large. Trim the ends of the broccolini.
2. Sauté the Mushrooms and Broccolini
In a large skillet, heat 1 tablespoon of truffle chili oil over medium heat. Add the mixed mushrooms and sauté for about 5-7 minutes until they are tender. Add the broccolini and cook for an additional 3-4 minutes until bright green and tender.
3. Incorporate the Cheeses
Lower the heat and add the ricotta and mozzarella cheese to the skillet. Stir gently to combine and allow the cheese to soften and melt slightly.
4. Add Thyme and Season
Sprinkle the fresh thyme over the mixture and season with salt and pepper to taste. Drizzle the remaining tablespoon of truffle chili oil over the top.
5. Serve
Remove from heat and serve immediately, garnishing with additional thyme if desired.
