Make the Gnudi
In a large mixing bowl, combine the ricotta cheese, all-purpose flour, grated Grana Padano cheese, egg yolks, salt, nutmeg, and chopped fresh parsley. Mix until a soft dough forms.

Shape the Gnudi
Flour your hands and take a small portion of the dough, rolling it into a ball about the size of a walnut. Place the formed gnudi on a floured baking sheet. Repeat until all dough is shaped.

Cook the Gnudi
Bring a large pot of salted water to a gentle boil. Carefully drop the gnudi into the water in batches. Cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Prepare the Romesco Sauce
In a blender or food processor, combine roasted red peppers, toasted walnuts, garlic, olive oil, vinegar, and smoked paprika. Blend until smooth and adjust seasoning with salt and pepper to taste.

Serve
Plate the gnudi and drizzle with the romesco sauce. Garnish with additional grated Grana Padano cheese and chopped toasted walnuts.
