Prepare the Pork Belly
Season the pork belly with salt and black pepper. Preheat a grill or pan over medium-high heat and cook the pork belly until crispy and cooked through, about 6-8 minutes per side. Once done, let it rest and then slice into bite-sized pieces.

Make the Bacon Tomato Jam
In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside. In the same skillet, add the onion and garlic, sautéing until softened. Add the diced tomatoes and cook until the mixture thickens, about 10 minutes. Stir in the crispy bacon and season with salt and pepper. Remove from heat.

Prepare the Ricotta Spread
In a bowl, mix the ricotta cheese with a tablespoon of Seka Hills Olive Oil and fresh basil. Season with salt and black pepper to taste.

Assemble the Bruschetta
Spread a generous layer of the ricotta mixture on each toasted baguette slice, top with a piece of grilled pork belly, and finish with a spoonful of the bacon tomato jam. Drizzle with additional Seka Hills Olive Oil if desired.
