    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, combine ricotta, Parmesan, egg yolk, basil, salt, and pepper. Mix well until smooth and set aside.

    Roll Out the Dough

    Divide the rested dough into four equal parts. Roll out each part into thin sheets (about 1/16 inch thick) using a pasta machine or a rolling pin.

    Fill the Ravioli

    On one sheet of dough, place a teaspoon of filling about 1 inch apart. Brush the edges with water and cover with another sheet of dough. Press to seal. Cut into squares or circles with a pasta cutter.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.

    Prepare the Sauce

    In a skillet, melt the butter over medium heat. Add the sage leaves and cook until fragrant. Toss the cooked ravioli in the butter sage sauce.

    Serve

    Plate the ravioli and sprinkle with grated Parmesan cheese. Serve immediately.
