Prepare the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cod
Dip each cod fillet into the batter, ensuring it's fully coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil, a few at a time. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried cod from the oil and drain on paper towels. Serve hot with lemon wedges.
