Prepare the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, salt, and black pepper. Gradually mix in the beer until smooth.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot, about 350°F (175°C).

Fry the Cod
Dip each piece of Icelandic cod in the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
Slice the French bread and spread tartar sauce on each side. Place a piece of fried cod on the bottom half, then add lettuce leaves and tomato slices. Top with the other half of the bread.

Serve
Cut the sandwich in half and serve immediately with additional tartar sauce on the side.
