Cooking Instructions
- 1
Prepare the Cod
Preheat the oven to 375°F (190°C). Season the Icelandic cod fillet with salt and pepper. Dredge the fillet in Italian bread crumbs, ensuring it's evenly coated.
- 2
Bake the Cod
Place the breaded cod on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- 3
Make the Sauce
In a small saucepan, melt the butter over medium heat. Add white wine and lemon juice, and bring to a simmer. Cook for about 5 minutes until slightly reduced. Stir in the Italian cheese blend until melted and smooth.
- 4
Prepare the Vegetables
While the cod is baking, steam the broccoli florets and sliced mushrooms until tender, about 5-7 minutes.
- 5
Cook the Pasta
Cook the pasta according to package instructions. Drain and toss with olive oil, salt, and pepper.
- 6
Assemble the Dish
Once the cod is done, place it on a plate, top it with the cheese sauce, and serve with the steamed broccoli and mushrooms on the side. Serve with a house salad and the side of pasta.
