Prepare the Jackfruit
Drain and rinse the canned jackfruit. Remove the core and seeds, then shred the jackfruit with your hands or a fork.

Cook the Filling
In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Season the Jackfruit
Add the shredded jackfruit, cumin, smoked paprika, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for 10-15 minutes, allowing the jackfruit to absorb the flavors and become tender.

Warm the Tortillas
While the jackfruit is cooking, warm the corn tortillas in a separate skillet over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos
Spoon the jackfruit mixture onto each tortilla. Top with fresh cilantro, avocado slices, and salsa or pico de gallo.
