Cook the Rice

Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 1.5 cups of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Sauce

In a large skillet, heat a tablespoon of oil over medium heat. Add the Thai red curry paste and sauté for 1-2 minutes until fragrant. Pour in the coconut milk, stirring to combine.

Cook Shrimp and Vegetables

Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink. Add the red bell pepper, carrot, and green onions, and stir-fry for another 3-4 minutes until the vegetables are tender.

Finish the Dish

Stir in lime juice, fish sauce, fresh basil, salt, and black pepper to taste. Mix well and remove from heat.

Serve

Fluff the cooked jasmine rice and serve it on plates. Top with the shrimp and vegetable mixture, and garnish with additional basil if desired.
