Season the Sauce
Stir in ground cumin, and season with salt and pepper to taste. Pour in the red enchilada sauce, and let it simmer for about 5 minutes. Remove from heat.

Prepare the Filling
In a bowl, mix shredded cheese and refried beans until well combined.
Assembling the Enchiladas

Fill the Tortillas
Preheat your oven to 350°F (175°C). Take a corn tortilla, and place a generous spoonful of the cheese and bean mixture in the center. Roll the tortilla tightly to form a cylinder.

Arrange in Baking Dish
Spread a thin layer of the prepared enchilada sauce on the bottom of a baking dish. Place the filled tortillas seam-side down in the dish. Repeat with remaining tortillas.

Top with Sauce
Once all tortillas are in the dish, pour the remaining enchilada sauce over the top, ensuring all tortillas are covered.

Garnish and Serve
Remove from the oven and let cool for a few minutes. Serve hot, garnished with sour cream, chopped cilantro, and sliced jalapenos on top.
