Prepare Rice Mixture

Rinse the Rice

Begin by rinsing the long-grain white rice under cold water until the water runs clear to remove excess starch.

Soak the Rice

In a large bowl, combine the rinsed rice, 4 cups of water, and the cinnamon stick. Let this mixture soak for at least 3 hours, or overnight for best results.

Blend the Mixture

Blend Soaked Mixture

After soaking, remove the cinnamon stick and transfer the rice and water mixture to a blender. Blend on high until the rice is finely ground, about 1-2 minutes.

Strain and Mix

Strain the Mixture

Using a fine mesh strainer or cheesecloth, strain the blended rice mixture into a pitcher, pressing the solids to extract as much liquid as possible.

Combine with Milk Mixture

In a separate bowl, combine 2 cups of milk, 1 tsp of vanilla extract, 1 cup of sugar, and a pinch of salt. Stir until sugar is dissolved.

Mix Together

Pour the milk mixture into the strained rice liquid and stir well to combine. Adjust sweetness to taste.

Serve

Chill and Serve

Refrigerate the horchata for at least 2 hours before serving. Serve over ice if desired, and sprinkle with ground cinnamon for garnish.
