Prepare the Churro Dough

Boil Water and Butter
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and immediately add 1 cup of all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Incorporate Eggs
Allow the dough to cool for about 5 minutes, then add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and elastic.

In a separate bowl, combine 1 cup of granulated sugar with 2 teaspoons of ground cinnamon. Mix well and set aside.
Fry the Churros

Heat Oil
In a large, deep pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe Churros
Transfer the churro dough to a piping bag fitted with a star tip. Once the oil is hot, pipe strips of dough directly into the oil, cutting them to your desired length with scissors.

Fry the churros for about 2-3 minutes on each side or until they are golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.
