Marinate the Chicken
In a bowl, mix the olive oil, taco seasoning, salt, and black pepper. Add the chicken breasts and coat them well. Let the chicken marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

Prepare the Vegetables
While the chicken is marinating, chop the lettuce, tomato, and onion into small pieces and set them aside.

Grill the Chicken
Preheat the grill to medium-high heat. Once hot, place the marinated chicken breast on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the grill and let it rest for a few minutes.

Slice the Chicken
After resting, slice the grilled chicken into thin strips.

Assemble the Tacos
Take a taco shell and fill it with a layer of lettuce, followed by slices of grilled chicken, a sprinkle of diced tomato, onion, and top it off with cheddar cheese.

Serve
Repeat the assembly for the remaining taco shells. Serve immediately with your choice of toppings or sides.
