Sauce Preparation

    Sauté the Garlic

    In a medium saucepan over medium heat, add olive oil. Once heated, add minced garlic and sauté for about 1 minute, until fragrant.

    Add Tomatoes and Spices

    Stir in diced tomatoes, chili powder, ground cumin, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.

Filling Preparation

    Mix the Filling

    In a large bowl, combine shredded chicken, softened cream cheese, shredded cheese, and chopped green onions. Mix until all ingredients are well incorporated.

Assembly

    Prepare the Tortillas

    Preheat the oven to 350°F (175°C). If the corn tortillas are stiff, warm them in a skillet or microwave to make them pliable.

    Fill the Tortillas

    Take a tortilla, spoon about 1/4 cup of the filling mixture onto the center, and roll it up tightly. Place the enchilada seam-side down in a greased 9x13 inch baking dish.

    Repeat the filling and rolling process with the remaining tortillas and filling. Arrange the filled enchiladas in the baking dish.

Baking
