    Cook the Rice

    In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed and the rice is tender. Fluff with a fork.

    Heat the Beans

    In a small saucepan, heat the canned black beans over medium heat for about 5 minutes until warm. Season with salt and pepper to taste.

    Cook the Meat

    If using ground beef, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Season with cumin, paprika, salt, and pepper. If using chicken or tofu, sauté in olive oil with similar seasonings until cooked through.

    Assemble the Burrito

    Lay a tortilla flat on a clean surface. Start by adding 1/4 cup of cooked rice, followed by 1/4 cup of black beans, and 1/4 cup of your choice of meat. Top with 1/4 cup of shredded cheddar cheese, and a dollop of sour cream and guacamole.

    Roll the Burrito

    Fold the sides of the tortilla inward over the filling, then roll from the bottom up to create a tight burrito. Ensure the ends are tucked in to prevent the filling from spilling out.

Cooking

    Heat the Burrito

    If desired, place the rolled burrito seam-side down in a dry skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and crispy.

    Serve

    Slice the burrito in half and serve with additional sour cream and guacamole on the side.
