    Prepare the Shallots

    In a small pan, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced shallots and cook until they are golden brown and crispy. Remove them from the oil and drain on paper towels. Set aside.

    Cook the Octopus

    In a large pot, heat the remaining tablespoon of vegetable oil over medium-high heat. Add the octopus pieces and sauté for about 5-7 minutes until they start to turn slightly golden.

    Add the Sauce

    Reduce heat to medium and add the tom kha paste, stirring well to coat the octopus. Pour in the coconut milk and bring to a gentle simmer.

    Add the Vegetables

    Once the mixture is simmering, add the maitake mushrooms and snap peas. Cook for an additional 5-10 minutes until the vegetables are tender and the octopus is cooked through.

    Season and Serve

    Season the dish with salt to taste. Serve hot, garnished with crispy shallots, lime wedges, and fresh cilantro.
