Babka Dough

Method

Making the Dough

    Prepare the Yeast

    In a small bowl, combine warm milk and sugar. Stir in the yeast and let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large bowl, combine flour, salt, and cinnamon. Make a well in the center and add eggs, melted butter, vanilla extract, and the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preparing the Filling

    Mix the Filling

    In a bowl, mix together brown sugar, cocoa powder, and dulcey chocolate chunks.

Assembling the Babka Bites

    Roll the Dough

    Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.

    Add the Filling

    Spread the filling evenly over the dough, then roll it tightly into a log.

    Cut the Rolls

    Cut the log into small pieces (about 2 inches each) and place them in a greased baking dish.

    Second Rise

    Cover the dish and let the pieces rise for another 30 minutes.

    Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
