Prime Rib Chop and Accompaniments

Method

Cooking Instructions

  1. 1

    Prepare the Steak

Season the prime rib chops with olive oil, salt, and black pepper. Let them sit at room temperature for about 30 minutes before cooking.

  2. 2

    Cook the Steak

Preheat a grill or a skillet over medium-high heat. Cook the prime rib chop for about 6-7 minutes per side for medium-rare, adjusting the time based on your desired doneness. Let the steak rest for 10 minutes.

  3. 3

    Make the Smoked Mushroom Gravy

In a saucepan, combine the smoked mushrooms and heavy cream. Simmer over low heat for about 15 minutes until the sauce thickens. Season with salt and pepper to taste.

  4. 4

    Prepare Horseradish-Onion Jam

In a skillet, sauté the chopped onion in a little oil until caramelized. Stir in the horseradish and cook for an additional 2 minutes.

  5. 5

    Make Fines Herbes Butter

In a small bowl, mix softened butter with fines herbes. Set aside.

  6. 6

    Prepare YV Steak Fries

Cut the potatoes into wedges. Heat oil in a deep fryer or large pot. Fry the potato wedges in batches until golden brown and crispy. Drain on paper towels and season with salt, garlic powder, and paprika.

  7. 7

    Serve

Serve the prime rib chop with smoked mushroom gravy, horseradish-onion jam, fines herbes butter, and a side of steak fries.
