    Prepare the Oven and Pans

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots and walnuts.

    Bake the Cake

    Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes before transferring to wire racks.

    Prepare the Frosting

    In a medium bowl, beat together the cream cheese and butter until creamy. Gradually add in the powdered sugar and mix until smooth.

    Assemble the Cake

    Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the cake.

    Serve with Ice Cream

    Scoop the pineapple butter-pecan ice cream onto each serving plate alongside a slice of carrot cake. Sprinkle with crushed ginger snap cookies for added crunch.
